Terroir: Anjou gravel on a clay-limestone base, hillside facing due south
Vinification: Vatting of sorted and destemmed berries to extract only the fruit of the grapes and avoid vegetal aromas.
Pre-fermentation cold maceration for one week to preserve the freshness of the fruit, beginning the alcohol-free aromatic extraction. Fermentation and maceration for one month with regular pumping over adjusted according to the tasting.
Wine profile: We have chosen pre-fermentation cold maceration as a means of expression because we want to showcase Cabernet Franc’s fruit. Le Paradis is a fruity and generous wine, with a beautiful tannic framework and ample fullness on the palate. It reflets a forthright and distinguished Anjou red wine.
Tasting note: The nose is deep, generous and enchanting with licorice notes. A feeling of freshness is expressed through a slightly vegetal and mentholated accent.
On the palate, this vintage expresses lovely lingering aromatic notes with a fine and complex tannic structure, enhanced by beautifully ripe Franc fruit from shale soils.
