Vinification :Harvesting at daybreak, low-pressure pressing, nitrogen inerting of the musts and rapid drop in temperature to protect the fruit and the aromas of the grape variety.
Natural temperature rise, spontaneous fermentation with indigenous yeasts and protection under CO2 at the end of fermentation to preserve freshness.
We take care to avoid any oxidation in order to obtain a rosé as pale as possible.
